As part of our continuing efforts to lose some "desk jobs and restaurants" poundage, I'm trying to cook food at home as often as I can. Well, during the week at least. My cooking skills are so-so but the previous owners of this condo left us a very nice stove and a huge fridge, and we have good grocery stores in walking distance.

Over the past month or so I started to fall into a rut of cooking the same one or two things over and over. So now I have a goal of trying at least one new recipe each week. Since I have some food blogs in my RSS reader, I often stumble across interesting recipes I want to try.

A few days ago I tried this potato taco recipe. I left out the poblanos -- I meant to compensate taste-wise with some Penzey's Southwest Seasoning and smoked seasoned salt, but totally forgot. They turned out very tasty anyway, but the level of effort was pretty high so I'm not sure whether I'll make them again.

Right now I have a tray of veggies roasting in the oven: chopped butternut squash, leeks, and green beans, sprinkled with salt, garlic powder, smoked seasoned salt and southwest seasoning. Trader Joe's produce section and Penzey's Spices FTW! I'ma serve it with some baked tofu on top.

Fun Fact: Just about any vegetable becomes much tastier when tossed in olive oil and oven-roasted. Try it! Grab a healthy vegetable from your fridge (or from a sale rack in the produce section), check The Interwebs for a good temperature and cooking time, then toss it in olive oil, salt it, and throw it in the oven! (Brussels sprouts require a bit more work -- this recipe is what I use)
